The company that produces the famous cheese Carmasciano is located in Contrada Montanaldo about 750 meters above sea level with an area of about 23 hectares, with a sort of cereal crop, forage and livestock. The Company, founded in 1945 as a farm, arose from ancient generations while keeping old traditions alive, had the ability to renew itself. It has kept up his name by taking part in several competitions, including the most significant was the competition “Golden Catarina” among dairy producers provincial Irpinia, winning the first priz.
The pastures are located near the Carmasciano Mefite, geoattiva an area with strong sulfur fumes. One of the unique characteristics of the cheese is a reddish streak under the crust, notably due to the accumulation of sulfur.
