The strong flavor of Irpinia’s meat
INGREDIENTS
Veal
grated cheese (parmesan or pecorino)
garlic
extra virgin olive oil
pepper
parsley
sauce
salt to taste
DIRECTIONS
Use pieces of veal not too thick. Lay the meat on a wood tabletop. Season the meat with a bit of grated cheese (parmesan or pecorino), salt to taste, and finally add cloves of garlic, pepper and parsley. Rewind the stuffed pieces of meat and close them using small spits. Cook over low flame with olive oil (a tablespoon at person) and, when the meat is well browned, pour into the pan the tomatoes for the sauce. Cook slowly.
